I am trying to get back on track with my meal planning. I completely fell off the wagon when I started working full time and now I am finally ready to get back to it. It’s funny to me that I stopped meal planning at the exact time I needed it the most. With my crazy busy schedule, I really need to be more organized and stick to a plan when it come to what the heck we are having for dinner. It truly makes my life easier. I find that the kids like having a plan and knowing what to expect. And they don’t bug me with the “what’s for dinner?” question everyday when I get home.
I have been a fan of emeals for a while, and will probably sign back up with them. It helps to get me out of my dinner ruts and we end up trying new things.
This weekend I made a HUGE batch of sauce and meatballs. I thought it was an easy way to get back into my groove. We had spaghetti and meatballs for Sunday dinner, and are having meatball grinders and salad tonight. I will also use the sauce for the Chicken Parmesan later in the week. I wanted to keep it simple this first week back in the swing of things. It’s only Monday, but so far so good! Haha!
