Sunday.

Today was a good day. Lately I have been just trying to get through each day. Can’t wait for the day to be over. Counting the minutes until I can go to bed but then not able to fall asleep.

Trying to figure all my shit out all at once. Not being true to myself. Wanting everything to be everything I want it to be right this minute.

But I need to remind myself to stop and live and breathe. Enjoy this journey. The good and the bad. It makes us who we are. It is the stories my family will tell long after I am gone. I need to feel my life.

I am not going to figure it all out all at one. And in the end all that really matters are the small moments in my life.

What we are eating this week!

I am trying to get back on track with my meal planning. I completely fell off the wagon when I started working full time and now I am finally ready to get back to it. It’s funny to me that I stopped meal planning at the exact time I needed it the most. With my crazy busy schedule, I really need to be more organized and stick to a plan when it come to what the heck we are having for dinner. It truly makes my life easier. I find that the kids like having a plan and knowing what to expect. And they don’t bug me with the “what’s for dinner?” question everyday when I get home.

I have been a fan of emeals for a while, and will probably sign back up with them. It helps to get me out of my dinner ruts and we end up trying new things.

This weekend I made a HUGE batch of sauce and meatballs. I thought it was an easy way to get back into my groove. We had spaghetti and meatballs for Sunday dinner, and are having meatball grinders and salad tonight. I will also use the sauce for the Chicken Parmesan later in the week. I wanted to keep it simple this first week back in the swing of things. It’s only Monday, but so far so good! Haha!

Random Sunday

I am sitting here listening to church on my computer with the smell of turkey bacon cooking coming from downstairs. We are staying home this morning. The kids are laying in bed watching Netflix. We needed this morning. We needed to slow down. Jake is marching with Scouts in our town parade this afternoon and then we are heading to a friends house to cook, relax and laugh.

We had a last minute plan change last night, we ended up meeting our friends and their kids at a local mini golf place. We were hoping to beat the rain that we knew was headed our way, but of course it started raining as soon as we got there. Luckily the kids could have cared less, and they played in the rain and had a blast.

It’s the little things in life. That is what makes a life. I just need to remind myself to stop and pay attention to them.

Ever since I got back from my Atlantic City trip I have been talking about it non stop. People keep asking me about it! While I was there, I was getting messages asking me where I was staying, and what did I think of it. Every time I Instagramed a new pic of the food I was eating, I swear, two minutes later I was getting a text about it. Most of my local CT friends had no idea how fun Atlantic City could be. Although it is not a far drive for me, I had never been to Atlantic City. One of the reasons I think was because I didn’t think it was a place we could go as a family. Boy was I wrong! Kevin and the kids decided to tag along last minute and they LOVED it.

We were pleasantly surprised by our room. It was big enough for all of us and we had an ocean view! But what really knocked our socks off was the TV IN THE BATHROOM MIRROR. Yes, CAPS were necessary for that. It was the coolest thing! I wish I had a good picture of it.

Caesars was SO pretty. I loved walking around the shops and restaurants. The customer service was amazing! I would totally stay there again. Actually, Kevin and I are planning a trip back there soon without the kids. If you also follow me on Instagram, you now that I love talking about and taking pictures of food. I love food. And let me tell you, this trip DID NOT disappoint. I had a fantastic welcome dinner at Mia. The chicken was amazing! I am still talking about it with people. I would go back to Caesars just to eat at Mia.

Another fabulous restaurant inside Caesars is Cafe Roma. I had a lovely breakfast there with some of my favorite blogging friends on Saturday morning and a yummy and fun dinner there on Saturday night with my family. The service was excellent and the mood was very relaxed. I think this was my kids favorite restaurant of the whole trip. We HAD to try their famous Boardwalk fries and I am glad we did! They were great! My meatloaf was delicious! The prices are reasonable and the food is really good. We give this place two thumbs up!

Oh! I can’t forget about “Taste of Atlantic City” Dinner hosted by Caesars Entertainment
at the Pool Loft at Harrah’s Resort on Friday night. What a nice night! We had the luxury of sampling some of the best food around. The Pool Loft is beautiful and the chefs were fun to talk and hang out with.

It’s no surprise to those who know me that the desserts were my favorite!

Sunday morning we were treated to Caesars Sunday Brunch at Nero’s. Talk about knock your socks off! This brunch was awesome. I tried Eggs Benedict for the first time and loved them. I mean really, where have they been all my life? I made a yummy crepe topped with fruit, whipped cream and of course chocolate syrup. So good! I had so much food I can’t even remember everything I had. It was really the most diverse brunch buffet I have ever been too. If you could think of it, it was probably there. Seafood, steak, eggs, waffles, desserts. It was ALL THERE. My Mom would have been in heaven. This was her kind of brunch buffet. The perfect end to our weekend.

This is just one of the many posts I will be writing about this trip. It was an amazing weekend, and I am so honored to have been a part of it.
